PIEROGIS
Arguably the most well-known and favorite Polish dish, many large food companies have mass-produced the pierogi. My Polish friends laugh when we mention the name pierogi because mass production does not give it the justice it rightfully deserves. Like all the dishes we offer, pierogi cannot be rushed or just thrown together as a quick afterthought. Like love, the pierogi cannot be impersonated. The difference between store-bought and homemade is unmistakable. If you want C-rations, join the Navy. If you want good, healthy, tasty food, welcome to Babci Kuchin.
Though claimed by the Poles, pierogis are popular throughout Eastern Europe. Some say that pierogi were spread by Marco Polo, and others suggest the pierogi was brought from Asia to Europe in the 13th century by the Dominican priest Hyacinth of Poland. There is an old Polish saying, “Święty Jacku z pierogami – “St. Hyacinth and his pierogi” – which is a call for help in some hopeless circumstance. The saying comes from a legend that claims that Hyacinth fed people with pierogi during a famine caused by the Mongol invasion in 1241.
As varied as the name might be, so, too, the stuffing… meats, mushrooms, braised cabbage, potatoes & cheese, and even fruit.
I start with fresh dough rolled thin and cut into circles. A dollop of filling is placed inside the circles, then the circle is folded over to resemble a half-moon, and the edges are pressed together to make a tight seal. I place the pierogis in the freezer. The rest is up to you.
To prepare them, boil a large pot of salted water. Carefully drop in the desired number of pierogis. Let them float to the top and allow them to cook a minute or so longer to ensure the filling is thawed. Next to your boiling pot, have a large skillet ready with hot butter and onions. It’s best if the onions begin to caramelize. Drain your pierogis well with a slotted spoon, place them directly into that butter pan, and allow them to brown slightly on both sides. Serve with a spoonful of sour cream if you like and enjoy!!!
